I'm not much of a cook. But, if I do say so myself, this recipe
kicks ass. It's easy to make, doesn't require alot of
perishables, and is just... so damn yummy. Also protein-filled for the vegetarians. The only drawback: the marinated artichokes aren't too cheap. But it's so worth it.
Ingredients:
3 6 1/2 ounce (184 ml) jars marinated artichokes
2 green onions, chopped in small pieces
4 large eggs, lightly beaten
6 single soda crackers, crushed (e.g. premium plus)
few dashes of tabasco/louisiana hot sauce
Drain the artichokes and chop into small pieces. Mix with the rest of the ingredients and pour into a buttered 8 or 9 inch quiche or pie pan. Bake in a 325 degree F oven for 25-30 minutes, or until a knife inserted into the center comes out clean, and it's golden and firm to the touch. Cut it up however you like - slices, squares, whatever.
You can also make it ahead and heat it in a 350F oven for 10-15 minutes, or nuke it.
