Angel's food is a medieval dish, which is a bit like a sauce and a bit like a cream. It was eaten in western europe during and around the time of the 15th century. It was most commonly served as an accompaniement to biscuits or cakes.

Ingredients:

Fluff the ricotta with a fork and whisk in the honey or sugar and the desired flavouring. Add a small amount to begin with, and then more as necessary. Serve with sponge fingers or biscuits.
