From the French industrial city of Laon comes Baguette Laonnaise, a soft washed rind cheese made of cow's milk with a 45% fat content.

Baguette Laonnaise is shaped into a loaf the size of a housebrick, and has a sticky orange-brown rind typical of a young washed rind. The interior cheese is supple and fresh, with a pungent flavour. The cheese is matured for two months, and should not be refrigerated.
