Hollywood term used to define the popularity of a star at the box office. The more "bankable" someone is, the more money they are likely to draw in on name recognition alone. Once a star is considered bankable, it becomes hard for them to lose this status, often still being cast in big-budget projects after their career has gone down the tubes. See the continuing use of Sylvester Stallone for an excellent example of this.
