Ingredients


  1. 2 eggs
  2. 2 egg yolks
  3. 1 tsp salt
  4. 1 cup flour
  5. 1 cup beer at room temperature
  6. 2 Tbsp melted butter or vegetable oil

Equipment

  1. Blender, food processor, or mixing bowl and whisk
  2. griddle, or 9" frying pan
  3. Spatula

Preparation

  1. Mix all liquids first, including the butter or oil.
  2. Mix in the eggs.
  3. Mix in the flour.
  4. If mixing by hand, mix for 3 minutes until smooth. If using a blender, mix at high speed for one minute.
  5. Stop, and scrape down the batter on the sides of the bowl, then blend the smooth mixture for 30 seconds to one minute more.
  6. If you mixed the batter by hand, let it rest for one hour. Otherwise, use it immediately.
  7. Oil and heat your skillet until a sprinkle of water on the surface immediately boils.
  8. Pour the batter onto the griddle as a thin layer, and give it about a minute and a half per side. The fnished product should be light brown (not even golden, like pancakes) and chewy, but not wet.
  9. Serve with fruit, whipped cream, nutella, sauteed mushrooms, gravy, ham, or whatever you feel like.

Makes 12 crepes.
