This is one of my greatest favourites. Almost all of these ingredients (except maybe the cabbage) are optional:

Preparation:

Cut cabbage into halves and remove hard wood-like core. Cut each half into 2 or 3 parts, then slice to width of about 5-8mm (your aim is to generate bits of cabbage small enough to put into your mouth). Coarsely chop onion. Heat oil in large pot and fry onion until translucent. Add cabbage and salt, and fry, stirring, until cabbage changes to a darker colour and some liquid is removed.

Add some vinegar and about 2cm water. Let boil, and add broken walnuts, dried fruit (raisins or prunes) if using, and spices (cloves, nutmeg, cinammon). Simmer covered over low heat for ~30 minutes. Chop apple and add, and cook for 10 more minutes. Add some wine and cook until most of the liquid is gone.
