Brun sovs (Brown Sauce) is a traditional Danish sauce that is often used, and for many different dishes.

The recipe is as follows:

  • 4 deciliters of stock or gravy from what you were cooking.
  • 30 grams of flour (wheat).
  • food-coloring (burned caramel).
  • salt and pepper as preferred.

Put the stock to a slow boil and thicken the sauce with the flour, while stirring. Add the coloring to create the brown color and season as you wish.

You can vary the sauce with some cream, tomato puree or a pinch of sugar depending on what the dish is.
