This is a nice breakfast dish for mid to late winter mornings. It is symbolic, because of its appearance, of the new rays of the sun coming through the winter, of the lengthening of the day. Try it with a friend or significant other.

Preheat broiler. Combine nutmeg and egg white; beat until stiff. Spread over toast. Make small indentation in the center, drop in egg yolk. Sprinkle with salt. Cover yolk with one slice of cheese. Broil until egg is completely cooked and cheese is melted, about 3-5 minutes.

Yield: 2 helpings
