This sounds nasty, but it is a popular recipe in my family. The name comes from the red color of the beets.

1 package, lemon Jello
1 cup, boiling water
3/4 cup, beet juice
3 tablespoons, vinegar
1/2 teaspoon, salt
1 tablespoon, horseradish
3/4 cup, diced celery
1 cup, diced beets
2 teaspoons, onion juice or grated onions

Dissolve Jello in boiling water. Add beet juice, onions or onion juice, horseradish, vinegar, and salt. Chill until partially set. Fold in celery and beets and chill until set. Garnish with the mayo.
