Carolina Caviar
A salad/dip that tastes great and is fairly healthy
(Thanks to my grandmother for this recipe)

Add the following to a large bowl:
1 can black eyed peas and/or 1 can black beans
1 can field peas
1 can shoe peg corn

Rinse and drain, then mix with
2 tsp basil
1 cup parsley
1 cup chopped onions
¼ cup red wine vinegar
½ cup olive oil
1 cup feta cheese

Add the following spices, adjusting to your taste:
2 cloves crushed garlic
½ tsp dried mustard
½ tsp pepper
¾ tsp Tabasco

Serve chilled with corn chips, or alone.
