Chabichou de Poitou is a traditional cheese from an important goat breeding region of France, Poitou. The cheese is (naturally) of goat's milk, soft, and slightly acidic and nutty. When young, the interior cheese is soft, becoming hard and brittle when aged. Chabichou du Poitou arrives at market with a blue-grey mold covering a soft white mold. The fat content is 45%
