A friend of mine made this for me and it rocked so hard I got the recipe. It is very easy to make, practically instant if you happen to have left over rice. And yes this is a curry dish WITH cheese, which is supposedly odd in itself but trust me it’s really freakin’ good. It also has peas – do not leave them out. Here is why, this is hot and tasty dish and the peas (which I will not usually eat), will give your mouth a break from the heat.

Assemble the following:

1 red onion, chopped
1 clove garlic, minced
1 can diced tomatoes
I bay leaf
1 TBS fresh ginger
1 TBS curry powder
1 –2 cups frozen peas, thawed
1 ¼ cup water
1 ½ - 2 cups shredded cheddar cheese
Cooked rice (any amount you desire)

Sauté onion and garlic until soft. Stand over the pan and smile and make mmm mmm noises, it does make a difference. Add the spices and tomatoes, stir it up. Wiggle while you do it. Get your whole self involved in the process of nourishing your body. Add water and reduce uncovered for 20 min. Add peas and cook 5 minutes. Remove from heat and add cheese. Serve over rice.
