In my opinion, Shanghai cuisine is by far the most fatty of all styles. In fact, it is so oily the food is likely to slide off your chopsticks. It is my least favorite style of Chinese food, but some people may differ.

Shanghai cooking places a heavy emphasis on the use of seafoods, oil, and wine. Cold dishes are also very popular.

Notable dishes include drunk chicken (chicken cooked in rice wine), hairy crabs (not as bad as it sounds, it is merely freshwater crabs), and fish of all sorts.
