Although there are several different ways to make Forloren Skildpadde, this was the first recipe that I came across while doing a google search on it. I couldn’t find this recipe in English, so ended up translating it myself. What follows is a traditional Danish recipe for "Fake Turtle". Also see fake rabbit.



Recipe

Ingredients:

  • 1.5 pounds of shoulder or head of veal
  • 3-4 carrots
  • 1 celery stock
  • 2 onions
  • small fish dumplings
  • small ham dumplings

Sauce:

  • 1 carrot
  • 1 celery stock
  • 1 onion
  • bay leaf
  • thyme
  • whole black pepper
  • tomato puree
  • a handful of flour
  • brandy
  • sherry

Instructions:

Boil the meat together with the carrots, celery, and onions for just under of 2 hours.

Sauce:

Fry the carrots, celery, and onions on high heat briefly. Add bay leaf, thyme, whole peppercorns and tomato puree. Add a handful of flour. Simmer for about 2 hour.

Sieve the sauce and mix with the meat, the ham and the fish dumplings. Add the brandy and sherry to taste. Dress with "smiling eggs" which are lightly poached eggs (cooked in 6 min).

  • 1 selleri
  • 1 løg
  • laurbærblade
  • timian
  • hele, sorte peberkorn
  • tomatpuré
  • en håndfuld mel
  • cognac
  • sherry

Fremgangsmåde:

Kødet koges sammen med gulerødder, selleri og løg i knap 2 timer.

Sauce:

Gulerod, selleri og løg svitses. Laurbærblade, timian, hele peberkorn og tomatpuré tilsættes. En håndfuld mel tilsættes. Koger stille og roligt i et par timer.

Saucen sigtes og blandes med kødet, små frikadeller og fiskeboller. Smages til med cognac og sherry. Pyntes med smilende æg kogt i 6 minutter.
