A delicacy born out of pure laziness

Ok, this is one I invented out of pure necessity, as the ingredients were the only ones left in my fridge, and I didn't want to go shopping. Turned out to be a beautiful meal, easy to whip up in 15 minutes, so I thought I share it with you:

What you will need (for two pastry pockets):

Pre-heat your oven to 180 degrees, while you're chopping away.

chop the garlic, chilies, onions and spinach and dice the chicken. Heat up the olive oil in a frying pan until it smokes and add garlic, onions, chilies and chicken and brown the melange, stirring continously.

When nicely sauteed, turn down the heat, add the spinach and rosemary and let simmer until the spinach is nice and soft.

Layout the pastry and add half of the spinach/chicken mixture on each square of pastry.

Sprinkle chopped or crumbled feta on top of the mixture.

Fold the pastry around the mixture, put the finished pockets in the oven and bake until golden brown.

Serve hot with a nice chilled pinot gris and fresh baguette.
