Impossible Pumpkin Pie

An impossible pie is a pie that is made with Bisquick, which "makes its own crust", hence the term 'impossible'. The crust of this pie isn't really a "crust" in "traditional" terms, but it forms a solid bottom which makes for easy serving once the pie is baked and cooled. The term "impossible" was coined by Bisquick for their pie recipes on the side or back of Bisquick boxes.

Pre-heat oven to 350° F. Grease 10 inch pie plate.

Add all of the following ingredients in a blender:

Blend all ingredients until smooth. You may have to stop and scrape the sides of the blender with a spatula, as this is a thick mixture. Pour into pie plate.

Bake for 50-55 minutes at 350° F.

Garnish with Whipped Cream if you like.


High Altitude Directions (3500 to 6500 feet): Heat oven to 375° F and bake for 45-50 minutes.
