Kadchgall is a traditional hard cheese from
Afghanistan.
It's usually made from sheep's milk, however when the flocks are low on milk, Afghan herders will substitute camel's milk clotted with yoghurt.
The cheese is pressed into cylinders, travels well, and is a staple of the nomadic herders.
