Ever bother to try out those free recipes on cans and cereal boxes? Believe it or not, sometimes they're actually good. If you love fried chicken but hate the guilt and/or hard work, this is at least as satisfying as KFC's salty brown chunks of deep-fat-fried poultry. Yes, I have not changed the name from the box of Kellogg's Corn Flakes; I have no idea what exactly makes this "double coated."

Directions:
Measure crushed Corn Flakes cereal into shallow dish or pan. Set aside.
In small mixing bowl, beat egg and milk slightly. Add flour, salt, and pepper. Mix until smooth. Dip chicken in batter. Coat with cereal. Place in single layer, skin-side up, in foil-lined shallow baking pan. Drizzle with margarine. Bake at 350 degrees Farenheit about 1 hour or until chicken is tender. Do not turn chicken while baking.
