favourite recipes
Parma chicken with fresh tagliatelli and tomato salsa
70g
Parma ham
4 skinless
chicken breast fillets
6
plum tomatoes, peeled deseeded and chopped
4
salad onions, finely sliced
1
tablespoon freshly chopped
mint
1 tablespoon freshly chopped
flat leaf parsley
1 tablespoon
olive oil
1 tablespoon
white wine vinegar
salt and freshly
ground pepper
500g pack of fresh
tagliatelli
1. Preheat the oven to 190 degrees
centigrade, 375 degrees
fahrenheit or
gas mark 5.
2. Wrap the
slices of Parma ham around the
chicken filletsand place on a
baking tray in the preheated oven for approximately
25 to 30 minutes, until cooked through
3. Meanwhile, prepare the
salsa , mix together the
tomatoes, onions, mint parsley, oil, vinegar, and seasoning.
4. Bring a pan of
lightly salted waterto the boil and cook
pasta following
instructions on the pack, drain well.
5.Transfer the
pasta to a warmed serving plate, arrange the
chicken on top and spoon over the [salsa.<{/br>
Serve immediately.
Serves 3 or 4 really hungry people.
For the
wine serve something
white and slightly
dry, like a
Pinot Grigio.
