Ingredients
  • 1 box of yellow cake mix
Pineapple topping:
  • 20 oz can of crushed pineapple
  • 3/4 cup sugar
  • 2 eggs
  • 3 level tsp. cornstarch
  • 1 tsp. vanilla extract
  • 1 tbsp. butter or margarine
Cream topping: Directions

Cake: Bake one yellow cake (using mix) in 9" x 13" pan. Cool.

Pineapple Topping: Cook first four ingredients until thickened. Add the rest. Cool in refrigerator before spreading on cake.

Cream Topping: Follow directions on 1 envelope of Dream Whip. Set aside. Mix cream cheese with confectioner sugar. Add slowly to dream whip. Spread on top of pineapple layer on cake.

Store cake in refrigerator.

This recipe makes a lovely, very moist cake that might be a little heavy on the pineapple for some people. A great idea for custom frosting would be to take white frosting in a container (white, with no flavor!) and use a mixer or an electric blender to mix in a half packet of any Kool-Aid drink mix you want. Don't use too much mix, though, or it may end up much too sweet!

Ingredients:

2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
2 eggs
1 (20 ounce) can crushed pineapple, with juice
2 teaspoons vanilla extract

Directions:

1) Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch sheet pan.
2) Sift together the flour, sugar and baking soda into a large bowl. Stir together the eggs, pineapple with juice and vanilla. Make a well in the flour mixture and pour in the pineapple mixture. Mix well and spread into prepared pan.
3) Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
