My favorite way to enjoy these is to tear them apart and dip them in granulated sugar. You can also enjoy them with salt, applesauce or just plain. They're perfect for brunch.

Finely grate the potatoes and onion slice by hand or in a food processor. In a bowl, mix the potatoes, onion, egg, flour, and salt together.

Pour a coating of oil into a heated skillet. Pour enough batter into the pan to make 4 inch circles. Allow the pancake to brown, flip, and brown on the reverse side.

Remove the pancakes from the pan and drain on a paper towel.

Ingredients
4 large raw potatoes
2 eggs
4 tablespoons flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Instructions

Grate your potatoes and drain the excess liquid. Add your flour, baking powder, salt, and eggs. Mix 'em all up really well. Throw a big old spoonful of your mixture into some hot oil in a heavy skillet. Fry until brown on both sides. Remove from pan and add some salt.

I've seen it eaten with applesauce, sour cream, and ketchup.
