I have discovered a way to make an egg disc/omelette/pancake/latke thing that cooks quickly and evenly, much more so than a regular omelette.

 

Ingredients:

2 eggs, extra-large preferrable

1/6 cup flour or 1/6 cup corn starch

tablespoon olive oil

 

1. Heat olive oil in small skillet, preferably non-stick.

2. Crack eggs in bowl.

3. Add 1/6 cup flour or corn starch. Mix thoroughly with eggs until there are no more clumps.

4. Pour mixture into pan.

5. Cook on one side for 1 minute or until firm. When it is possible to lift egg disc like a pancake, flip and cook on other side for 20 seconds. 

6. Remove from skillet and serve hot.
