4 medium red potatoes
1/2 tsp red pepper flakes
2 tbsp olive oil
1 tsp dried rosemary
Clean red potatoes. Leave peel on. Slice off ends and discard. Slice potatoes into 1/2" thick slabs. Add olive oil to 9" x 12" baking dish. Coat potato slabs with the oil. Crush rosemary, and sprinkle over potatoes. Sprinkle red pepper flakes over potatoes. Add salt and pepper to taste. Roast at 400° for 45 minutes, until the potatoes are golden brown.
These potatoes are delicious as-is, and are even better with ketchup. Seriously.
