You can use seitan (meinjin gluten) or you can learn to summon seitan in your own home by going to All Hail Lord Seitan!.

What You Need
1 pound of seitan
2 tsp sesame seeds
salt
fresh white pepper
1 TB vegetable oil
1/4 pound fresh shiitake, stemmed, caps sliced thinly
1/2 pound Nappa cabbage, sliced thinly (about 2 cups)
2 tsp rice vinegar
2 tsp shoyu(soy sauce)
1 teaspoon sesame oil
1/2 teaspoon minced ginger

What Now?
Coat the seitan with the sesame seeds and season it with salt and pepper. In a large smoking hot wok add 1 tablespoon vegetable oil and briskly stir-fry the seitan and mushrooms for 3 minutes. Add the Nappa cabbage and stir-fry for another 2 minutes. In a small bowl, combine vinegar, shoyu, sesame oil, and ginger. Add mixture to the vegetables with salt and pepper to taste, and stir-fry for 1 more minute.

Serve with rice or noodles.
