1      15-ounce can salmon, undrained
1      cup crushed bread crumbs
1      medium or large onion
¼      cup oil (canola, olive or vegetable)

Saute onion in oil in a large skillet; until transparent. Into the onions empty the can of salmon and the bread crumbs, using a spatula to mix all the ingredients well so that the texture is uniform.

Spread the mixture evenly across the entire skillet and let it brown on the bottom for about 4 to 5 minutes. Use the spatula to turn over the contents so the browned bottom is on top. It doesn't matter if the turned -over food is broken up in the turning, and let the bottom brown (another 3 to 4 minutes)

It goes very well with Home-made Stewed Tomatoes.
