Tequila Marinated Grilled Shrimp

2 pounds fresh large shrimp, peeled and deveined, leaving tails intact
1/4 cup olive oil
5 cloves garlic, crushed
1/4 cup tequila
1/4 cup fresh lime juice
2 tablespoons snipped fresh cilantro
1/4 teaspoon coarse salt

1. Combine all ingredients in a medium-sized bowl. Allow the shrimp to marinate for at least 30 minutes.

2. Grill shrimp on the rack of an uncovered grill directly over medium-hot coals for 10 to 12 minutes or until opaque, turning once halfway through grilling time and brushing with sauce the last 2 minutes of grilling.

This recipe is great to serve during summer dinners and parties. They require very little effort, but look and taste wonderful. The preparation can all be done several hours ahead of time and then grilled when you are ready.
