This is an ancient Venetian recipe that includes Suppli: Deep Fried Rice and Cheese Balls but can be served instead poured over some stale crusty Italian bread and some cheese.

What You Will Need
1 ½ quarts vegetable stock
1 large beet, boiled, peeled, cut into matchsticks
2 carrots cut into matchsticks 1 large leek, cut into matchsticks ¼ pound celeriac (celery root) peeled and cut into matchsticks (salt and pepper are not traditionally used but feel free to)

What Now?
Simplicity itself. Bring the stock to a boil, add the vegetables and simmer for ten minutes. I prefer to roast the vegetables at a high heat for ten minutes first and then add them to the stock.

If you are using the rice balls, place them in a soup plate and ladle the soup over them. If using bread, same thing but it’s bread, not rice balls.
