Okay, I just found this empty node, and as a devotee of greasy food, I decided it needed a writeup.
Blood Sausage can either be a real sausage or just come in a can without the wrapper. As the name suggests, there is a decent amount of beef blood in the stuff, along with (usually) bread crumbs, chopped or ground beef liver, chopped or ground fat and skin of pork, along with a lot of salt and sometimes some light spices.

To prepare it, you take a hot pan and fry it, and usually serve it with eggs, toast, and hash browns. It's a close relative of corned beef hash, scrapple, and black pudding. Not for the faint of heart, but I like it.
