A most delightful, not to mention artery clogging, clear broth of the Filipinos. Its main ingredient is beef bone marrow. Here is its traditional preparation.


Throw them all in a pot and pour enough water to cover the bones. Boil for as long as you want, the longer the better, not for less than one hour. Add water as needed and remove the scum that will gather in the surface. Serve piping hot.

Perfect with rice or just by itself after a specially serious drinking session.
