A fabulous hot sauce of Chinese or Vietnamese origin. The principal ingredients are chili, garlic, and vinegar, plus usually some preservative that you wish wasn't there because it has a scary chemical name, but which you can't seem to avoid. Chili garlic sauce usually has visible chili seeds, so it makes an attractive dipping sauce for spring rolls. Similar to Indonesian sambal.
