A cool little ceviche recipe thanks to homecooking.tqn.com. Shellfish and other whitefish can be substituted for the cod. You will need one and a half days to make it properly.

Equipment


  1. A knife and cutting board
  2. Two bowls and a wooden spoon
  3. A strainer or colander
  4. A refrigerator

Preparation

Step 1

Ingredients

  1. 1 pound cod
  2. 1/3 cup fresh lemon juice
  3. 1/3 cup fresh lime juice
  4. 1/2 teaspoon salt
  5. 1/2 teaspoon whole oregano
Dice the cod into small cubes of about 1/2 inch. Mix all ingredients and marinate for two hours in the refrigerator.

Step 2

Ingredients

  1. 1 tablespoon olive oil
  2. 1/3 cup fresh lemon juice
  3. 1/3 cup fresh lime juice
  4. 1/2 teaspoon salt
  5. 1/4 teaspoon white pepper
  6. 1/4 teaspoon ground pepper
Pull the marinated fish out of the refrigerator and drain all juice. Add all the above ingredients and mix in:
  1. 1 finely chopped medium tomato
  2. 1/2 finely chopped medium onion
  3. 1 teaspoon vinegar
  4. 1 fresh seeded, minced jalepeno pepper (wear gloves)
  5. 4 oz cooked salad shrimp (optional)
  6. 1 tablespoon chopped cilantro.

Refrigerate for 8 hours, or overnight. Serve on a lettuce leaf, or on a tortilla shell. Goes great with chips. Makes 4 cups, serves 8 appetizers.
