Crawfish Pie

A crawfish pie is similar to an empanada. It is composed of a mixture of crawfish and generally celery, onion, and green pepper (known as the Cajun Trinity) folded into a pastry shell and either baked or fried. Half-moon in shape and golden-brown in color -- and about the size of a McDonald's fruit pie -- if you like fish/seafood, even a mediocre crawfish pie is a treat. A good one is simply heaven.

I apologize for not including a recipe. Dozens can be found online or in regional cookbooks, but I have not personally tried one and so I cannot vouch for any of them. My wife dislikes the taste of fish, so -- although I love seafood myself -- that tends to limit how often I cook it. If, however, I ever do cook up some crawfish pies I will amend this writeup. In the meantime perhaps someone else will be kind enough to provide a recipe.
