A common British expression that a criminal would supposedly say when arrested by the police for a crime they had commited. The term 'cop' is this case is not referring to the police officer (the copper), but rather to the act of arresting or 'copping' the criminal. The word, as used here, is the same as in the phrase "copping a feel". This expression was made somewhat famous in areas outside of the U.K. through Britcoms such as Monty Python, or The Young Ones.
