I remember helping my Grandmother make these doughnuts and always begging to drop the dough into the fat with the doughnut maker.
On one occasion I let too much dough through the doughnut maker and as a result produced a super sized doughnut. I was immensely proud of that big doughnut. To my dismay my Father ate my big doughnut while we were out of the house.

Boil the potatoes until tender. Drain and mash the potatoes in a large bowl. Add the remaining ingredients except for the oil and mix well.

Place the mixture in a doughnut maker and drop into hot grease. If you don't have a doughnut maker (a spring loaded device to portion out the dough in the traditional shape), you can simply spoon the dough into the fat. You won't have holes in your doughnuts, but that's ok.

Cook both sides until brown.

Drain the doughnuts on paper towels and sprinkle with confectioners sugar.
