Mettwurst is a fine German uncooked and smoked sausage.

The stuffing for the casing is cured beef and pork, very finely ground. The seasonings include allspice, ginger, mustard, white pepper, and coriander seeds.

The bright red sausage is sold smooth and spreadable (it's for this reason that the sausage is also known as schmierwurst). It is sliced and fried before serving in the winter months, or spread on crackers or bread during warmer weather.
