A traditional dish of various southwestern Native American tribes. You can make it yourself on a camping trip to the desert. Also spelled napalitos. Thanks to www.nativetech.org for a few variations on this recipe.

Ingredients

  1. 1 paddle of the Prickly Pear Cactus
  2. Vegetable or animal oil, or butter.
  3. A pinch of salt

Equipment

  1. skillet
  2. saucepan (optional)
  3. pliers or leatherman
  4. knife
  5. campfire

Preparation

  1. De-thorn the cactus paddle. Use the pliers for the larger thorns, and singe off the smaller ones with the fire.
  2. Dice the paddle, or cut it into strips. You may also want to soften the cactus in boiling water at this point.
  3. Sautee the cactus with the butter or vegetable oil. Throw in onions or peppers for flavor.
  4. Add salt and serve. Goes well with eggs.

Serves two Apaches.
