• 1 pound firm or extra-firm tofu, cut into small (.75cm) cubes
  • 2-4 T Nayonnaise
  • 1/2 C Green olives with pimientos, chopped
  • 1/4 C onion (red or yellow, optional)

Mix all ingredients together until smooth. Chill for a bit--it's best after sitting for a few hours to let the flavors marry.

Serve on really good whole-wheat bread. Toast if you wish.
