This might seem a bit of an odd breadfast, but it looks and tastes very good. To make it you will need:
- A bag of frozen “curly’ French fries
- A bag of blue corn chips
- A couple of onions
- Some fresh garlic
- Eggs for scrambling
- Salsa (of your choice)
- Onion powder
- Salt
- Black pepper
Bake the
curly fries in the oven. While they are cooking, chop and sauté the onion in a mixture of
olive oil and butter in a large skillet. Take the fries out of the oven when they are somewhat crunchy and mix them with the cooked onion. Add lots of minced garlic, a sprinkle of onion powder, some salt and a generous amount of black pepper. Then make some
scrambled eggs and set them aside.
Mix some hot salsa into the potato/onion mixture, open the bag of blue corn chips and break some of them into smaller pieces. Add them to the potato/onion/salsa mixture then turn it all on to a shallow serving dish.
Use a spoon to place large pieces of scrambled egg on top of the potatoes. Salt lightly, add a dusting of black pepper and serve with some extra salsa on the side.
You could use straight-cut frozen fries for this, but they take longer to cook. Plus, they’re not as much fun as curly fries when combined with blue corn chips.
