Carolina Fire Jelly is one of the reasons I should go to North Carolina often. In the farmer's market in Cary (right in the Amtrak station), I've tried some of this jelly spread on a cracker, and it is definitely something I should keep in the refrigerator. The Fire Jelly is something that will make a delicacy out of a boring sandwich. Well, If I have to drop by some deli that serves sandwiches (like anything out of Katz's Deli). Once you taste it, it takes a bit of time for the pepper's flavor to kick in, then you'll reach for a glass of water or something. Well, it's not that hot until you get the habanero pepper-flavored fire jelly.
