Rumaki is a delicious appetizer served typically in Chinese restaurants.

The version I am familiar with involves wrapping a piece of water chestnut with a generous helping of seasoned liver, then wrapping the entire bundle with bacon. A toothpick can be utilized to hold the package together, and it is deep-fried in sesame or peanut oil.

Rumaki makes a great beginning to a multi-course meal, although it is difficult to find well-made versions. It's worth the search, however. It is easy to make at home, and you can impress guests if you start with a tray of Rumaki.
