For those of you not in the know, a scone is basically what an American would call a biscuit (and if you are from the UK, I should warn you that Americans mean something completely different when they say biscuit). However, Americans generally have the idea that scones should be sweet. I mean, sweet even before you put on the jam and whipped cream. So these are sweet scones, with no milk or butter.

Preheat oven to 415 f. (215 c.)

Mix together:

  • 3 cups flour.
  • 2 teaspoons baking powder.
  • 1/4 cup sugar.
  • 1/4 teaspoon salt.
Add, mixing until smooth:
  • 1/3 cup vegetable oil.
  • 3/4 cup soy milk (flavored is okay).
  • 2 teaspoons apple cider vinegar.
  • Flavoring to taste (vanilla extract and/or orange zest work well).
Drop globs of about 1/4 (bigger is okay) on a cookie sheet, and pat the tops with a bit of sugar (optional). Bake for 12-15 minutes.

This recipe works well if you add up to 1 and half cup of berries, but this may depend on the berries used. Experiment carefully. This recipe will work with chocolate chips, but the oven temperature will have to be reduced to about 350 f., which will affect baking times.

Serve with jam, marmalade, vegan whipped cream, margarine, and other goodies. And a nice cup of tea, of course.
