Menudo is a traditional mexican stew made with tripe, hominy, and chilis. Typically a late night or early morning snack, Mexicans also tend to use it as a hangover cure. Menudo recipes tend to be passed down in the family or villiage, and they all vary in the ingredients, but here's a basic one.

Basic Menudo

The rest is pretty simple, just cut up the calf's foot and tripe, and put everything in a pot and simmer for about 2 hours. Top with fresh cilantro and chopped green onion to serve.
