Altapol is a relatively new cheese specifically developed to contain higher levels of polyunsaturated fats. The cheese was developed by the Australian Commonwealth Scientific and Industrial Research Organisation, in light of scientific evidence implicating saturated fat with cardiovascular illness.
According to the manufacturers, while regular milk contains a polyunsaturated fat level of 3%, Altapol contains 20%. Altapol is a cheddar-style cheese with a light yellow colour and a firm texture. It is marketed by a commercial company in 5lb rindless blocks. There are also processed and smoked processed versions available.
Its mild, undemanding taste makes it a good cheese for sandwiches and snacking, especially for those concerned about their intake of saturated fats. It has an unpronounced aroma and goes well with light red and white wines. The total fat content of Altapol is about 34%.
