Use ong choi if you can, which is Chinese water spinach. But boh tsoi, common spinach, will do.

What You Will Need
One pound of fresh spinach well washed
Six cloves of minced garlic
One slice of minced ginger
Two tablespoons of cooking oil
One teaspoon of saké or sherry
One teaspoon of salt
One teaspoon of white pepper

What Now?
Heat a wok, add the oil, stir-fry the garlic and ginger for a minute or so. When they become fragrant, add the spinach. This will only take a minute. Season with salt, pepper and saké. Serve hot.
