A celebrated
English goat's milk farmhouse cheese, Capricorn Goat is a chalky product when young, softening with some age.
The flavour has been described as being remeniscent of chicory and nuts, while the texture has been described as being similar to unripe camembert. The cheese has a surprisingly low fat content for a hand-made farmhouse variety, at only 26%.
Capricorn Goat won bronze at the British Cheese Awards.
