Tartare sauce is the most perfect accompaniment to most seafoods, and it's easy to make at home!

The best tip I can give is to use the best quality store-bought mayonnaise you can afford. The cheap stuff will make your tartare sauce taste like that gum arabic crap McDonalds puts on a Filet-O-Fish. Since you're on E2, you are obviously a person of some refinement, so I'm quite sure you're with me on this point.

The method is easy:

PUT THE RIGHT STUFF INTO THE MAYONNAISE and THEN PUT SOME MORE STUFF IN TO MAKE IT YOUR OWN RECIPE.

The right stuff is:

Mix well and chill -- the longer you leave the ingredients the better it will taste, as they'll all have a chance to mingle. Overnight is perfect.

You can add yummy extras like finely chopped spanish onion (they're the red ones), mustard seeds, fresh chives, crushed garlic, dried chilli flakes, or whatever else takes your fancy.

PSST! wanna know my secret ingredient? CARAMELISED ONIONS. Don't tell no-one, though, Bud...
