This is one of the few holiday cookie recipes that yields sweet, soft cookies that don't crumble when you cook them. I have found that many other recipes make brittle or not-very-sweet cookies that must be frosted to both hold together and taste good! While these can be frosted (and should be for enjoyment and festive purposes), they are still perfectly good plain. Use fun cookie cutters and different colored icings to make this a family affair or a gathering activity. The recipe can be halved for less excess.

Mix together first 5 ingredients. Mix vinegar and baking soda together before adding to dough. Chill for 2 hours. Roll out very thin between tea towels or patterned tablecloth until pattern can be seen through dough. Cut out with cookie cutters. Bake at 350ºF for 5 minutes (or longer if thicker) on ungreased cookie sheet. Decorate.

Yield: About 5 dozen, depending on cookie thickness
