Simple to make and very flavourful. If you don’t have a
food processor, you could make it by mashing the
beans with a fork.
In a food processor, whir white kidney beans with some extra virgin olive oil, salt, black pepper, ground cumin, onion and garlic powders. Turn into a serving bowl and mix in fresh oregano leaves, torn basil leaves and snipped chives. Garnish with some of the oregano, basil and chives along with a dusting of cracked pepper.
Put the serving bowl in the centre of a platter and surround it with crunchy romaine lettuce leaves and sliced plum tomatoes dusted with ancho chili powder and salt. A second platter could hold a stack of warm tortillas or a bread of your choosing.
This is a complete protein and would provide even more if you served it with White/Gold Corn Soup.
