A mixed milk cheese of France, Briquette du Forez is made from cow's and goat's milk. The mixed curds are matured in humid cellars until the cheese becomes dry. The flavour of Briquette du Forez is distinctly of vegetables and plant matter, which is well regarded by cheese lovers.
