(GLUTEN FREE, PALEO, VEGAN!!)


Prepare and mix the following ingredients:

* 3 Granny Smith apples, cut into chunks

* 3 Anjou pears, cut into chunks

* 1 tsp. cinnamon

* 1/4 tsp. ginger

* 1 tsp. vanilla extract

* 2 T. coconut flour or flakes

* 2 T. oat flour or rolled oats


In a separate bowl, mix the following ingredients:

* 1 cup almond flour

* 2 T. shredded coconut or flakes, toasted in dry frying pan

* 1/2 cup slivered almonds, toasted in dry pan

* 1/2 cup walnut pieces

* 3 T. oil (canola or light olive oil)

* 1/4 cup maple syrup


Lightly oil a 9X13 inch pan. Spread first mixture evenly, then add second mixture as topping. Bake at 350F for 35-40 minutes or until nicely browned and crunchy. Serves 8. Best eaten warm and can be enjoyed any time of the day or night!


(This is an adaptation of two recipes because I had some pears that wouldn't ripen and hate to waste food. I don't adhere to any diet so I like this with a few dollops of Greek vanilla yogurt. Feel free to use different fruits, sweeteners, or choice of nuts.)
